Lightly sweetened, perfectly flavored coconut yoghurt waffles are crisp on the outside and tender on the inside, making it a great morning or mid-day snack. A great way to start the day, especially when topped with Al Rawabi Full Fat Fresh Yoghurt.
All you need is:
- ½ cup Al Rawabi Full Fat Fresh Yoghurt
- 1 ¼ cup Unsweetened almond milk
- 1 tsp Lemon juice
- 1 tsp Vanilla extract
- ¼ cup Coconut oil
- 2 tbsp Maple syrup
- ½ cup Gluten-free rolled oats
- 1 ¾ cup Flour
- ¼ tsp Salt
- 1 ½ tsp Baking powder
- 2 tbsp Coconut sugar

In a medium mixing dish, combine almond milk and lemon juice or vinegar and set aside for 5 minutes.
Then in the same mixing bowl , whisk together the yoghurt, coconut oil, vanilla extract, and maple syrup until fully combined( If coconut oil hardens, reheat in the microwave .)
Add the dry ingredients in a large mixing bowl, and whisk until well incorporated.
Combine the wet and dry ingredients in a mixing bowl and stir until thoroughly combined. Allow for a 10-minute rest while your waffle iron heats up.
Coat the waffle iron well with non-stick spray or coconut oil once it’s hot, then pour on about 1/2 cup of batter. Then remove from the oven and place on a cooling /rack set on a baking sheet in a 93°C oven.
Serve immediately with desired toppings.
